Finca El Amate was purchased by José in 2008 and was named after a 40-year-old Amate tree that called the property home. Immediately after aquiring the farm, José set to work planting his coffee crop, producing his first commercial harvest in 2019.
Coffee is harvested between December and February, during which time he employs up to 60 people to aid with the harvest and washing process. Hand picked, coffee is then fermented in a traditional pulper for 12-hours. Coffee is then washed and laid out to dry on concrete drying beds until desired moisture content is achieved.
