The Sugarcane Decaffeination Process is a new method of extracting the caffeine from coffee. The coffee is submerged in a mixture of water and Ethyl Acetate (EA) - a naturally occuring compound derived from the fermentation of sugarcane. EA bonds with the caffeine molecules, drawing them out of the coffee bean without the need for the extensive washing of Swiss Water Decaffeination, allowing the coffee to retain more of it's distinct flavour characteristics.
